Kare-Kare (Beef Stew with Vegetables and Peanut Sauce)

Kare-Kare is a popular Filipino dish. I am not sure what is the English name for this. The main ingredient is beef and the common cuts of beef used are tail, shank or face. It depends on what you prefer to eat. But now, I am using beef shank and ox tripe. Let the cooking begin.

Ingredients:

1/2 kilo ox tripe
1/2 kilo beef shank cut into 5 to 6 pieces
3 tbsp. cooking oil
1/2 head native garlic, minced
2 onions, minced
4 cups water
1 cup ground peanuts (use peanut butter if ground peanut are not avail), mixed with 1/2 cup hot water
2 cups coconut milk (preferably kakang gata)
achuete seeds,soaked in warm water for 10 minutes
1 cup finely ground rice
salt and pepper, to taste
sitaw, cut into 2-inches lengths
banana heart, sliced
eggplants, sliced diagonally

Procedure:

Cut the ox tripe in 2 x 2 inch sizes. Add the cut ox tripe and cut shanks in a pressure cooker to tenderize. Drain and set aside.

In a large stockpot, heat oil and saute garlic,onions and the tenderized ox tripe and shanks. Pour in water.

Add the peanut mixture and cook for 10 minutes. Bring to a boil.

Pour in 1 cup of the coconut milk. Cook for another 10 minutes then add the remaining coconut milk.

In a bowl, strain the soaked achuete seeds. Discard the seeds and pour the colored water into the pot. Add the ground rice to thicken liquid. Season with salt and pepper.

Add the vegetables and simmer until vegetables are tender.

Serve hot with rice and bagoong.

  4. wow, sarap nito ah. kare kare sauce from scratch! ;) dito kasi hindi naman available ang mga ibang ingredients katulad ng achuete, kaya gumagamit na lang ako ng Mama Sita's instant kare-kare mix, at lalagyan ko na lang ng peanut butter. masarap din naman kahit instant. hehe!

    di ko din alam pano gumawa ng gyoza, pero i'm sure makakakita tayo nyan sa internet. kumain nga ako ulit kagabi kasi nag crave na naman ako. takaw ko talaga. lol.

  6. ai wala talaga akong masabi ang galing mo magluto at masarap for sure. Tuwing nagvivisit ako hindi ko maiwasan hindi maglaway diyan sa mga luto mo. sigh! sobrang nakakamiss food natin buti pa nga si KM may nabibilhan ng Filipino foods pero ako wala talaga dito sa amin. ;-/

    Maybe in Indonesia you can find it,it's like traditional food in Indonesia
    But maybe this taste is different
    Sometimes people like to use chiken
