Chicken Fritters in Barbecue Sauce

 Good day everyone. I don't have work today because I attend an activity last night. So I do have a very long weekend ahead thanks to one offset duty and two days holiday here in Philippines (August 29 National Heroes Day and August 30 End of the Feast of Ramadan a.k.a. EID'L FITR). So I am so excited to go home and relax and enjoy may weekends with my family. 

I'm planning to cook another simple and easy to cook food "Chicken Fritters in Barbecue Sauce". We already try this one and it taste good so i will try this again by myself. 

Ingredients:

For the chicken fritters:
500 grams ground chicken
1/2 cup all-purpose flour
1 egg, beaten
1/2 cup minced onion
1 tbsp. minced garlic
1 tbsp. liquid seasoning
1/2 tbsp. lemon juice or calamansi juice
1 cup frozen mixed vegetables
oil for frying

For the barbecue sauce:
1 tbsp. butter
1/2 tsp. minced garlic
1 cup bottled barbecue sauce

Procedures:
1. In a bowl, combine the ingredients for the chicken fritters. Mix well. Season with some salt and pepper. Chill for about 15 to 20 minutes for easier handling.
2. Scoop about 3 tbsp. of the mixture and form in a patty. Put on a floured tray and do the same for the rest of the mixture.
3. Heat oil in a pan and fry the fritters until golden brown. Drain on paper towels.
4. For the sauce, heat butter in a pan the saute garlic. Add barbecue sauce and simmer for 5 minutes. Season with salt and pepper, as needed. Serve with chicken fritters.

NOTE: To make crispy fritters, roll the patties in breadcrumbs before frying. The fritters can also used as sandwich filling or made into mini patties and served as appetizer.
